Food update

 

There is no more cheese in the house.  There are still 4 chicken breasts in the freezer that will probably go home with someone.  I have no desire to make them.

I am pouring over vegan and vegetarian books from the library and filling up my Plan to Eat site with tons of recipes.  Baked tofu ROCKS.  We’re trying out some various things that we find at Publix, Target, or Whole Foods.  Tofurkey italian sausage is a big fail, but Gardein ‘chicken’ nuggets are really yummy! 

I like that our veggies aren’t an afterthought, that we’re not eating stuff loaded with unhealthy stuff, and that eating healthy should keep us happy and healthy for a very long time. 

Today I made a huge pot of black, cannellini, and red beans in a super yummy chili sauce with diced tomatoes and tomato sauce.  I served those over some elbow macaroni and topped it with Tofutti sour cream.  The kids inhaled it.  Yay!  I think the leftovers will end up in a roasted butternut squash tomorrow.

My day with Hannah

This past Saturday, Hannah and I spent the day at the Magic Kingdom.  Why Hannah and not Kali or both??  Hannah finally decided to listen to me and she learned how to swim!  When she realized that she was swimming by herself, she started crying.  Awwwwww.  I had won two tickets back in February that were burning a hole in my wallet, so I figured that this was a great reason to go and celebrate.  Kali was just happy that her sister got to go – seriously.  I’ve never met a more unselfish child in my life.  Well, unless you try to take her fruit nuggets from her, then she might bite you.

Hannah had never been on Space Mountain.  She loved it.  :)  We went on it 3 times that day.

Sure, Spectro Magic is great, but the Main Street Electrical Parade makes me feel 10 again.  :)  I love this parade!

The park closed at midnight, and we stayed until just before the end.  We rode a bunch of other rides that I didn’t get pictures of, had some awesome pineapple floats, lunch and dinner were great, and we hit up the candy store.  Fifteen hour of Magic Kingdom magic with my most favorite 9 year old in the world.  I’m so glad she had a great time and I’m so glad she learned how to swim.

I’m still here!

I am sorry for not updating in what seems like forever.  I have so much to blog about and I’m not creating any time to blog at all.  I have tons of pictures to share, lots of stories, and I promise to get to that in the next few days. 

Right now we are making some more food changes around here (what else is new, right?!)  We have decided to finish eating all the meat and dairy around here and then that’s the end of it.  No more meat.  No more dairy.  Oh how I will miss my masala sauce from Trader Joe’s.  Dang it, can’t they make it without cream?!?!  We will, however, keep buying (what we hope are) free range eggs.  I’ve also cut down on my coffee consumption (gasp!) and after 4 days of no coffee, I had some tonight.  I do love my chai tea in the morning now.  :)

I am on schedule with my half marathon training and it seems to be going well so far.  Once the runs get longer on the weekend, I might not say that it’s ‘easy’ anymore, but it will still be doable. 

Keep checking back for a big blog post from my day at the Magic Kingdom with Hannah this past Saturday.  All I can say is, it was 15 hours of Magic Kingdom magic with my favorite 9 year old in the whole world.  :)
