Food, food, and more food.

 

We’re on week 4 (I believe) of no meat and no dairy.  My scale is 6 pounds happier at the moment, and I feel fantastic.

So I was thinking of doing something……..I’m thinking of doing a blog project for next year following our food journey.  We’re not vegan, but if I say vegetarian, people think we still eat dairy.  So Hannah came up with Veggan – she said that’s vegan with eggs. 

Tonight we had some yummy salads with all sorts of stuff in it (my favorites were the sunflower seeds and the sundried tomatoes) and some veggie fritters.  The fritters had carrots, zucchini, sweet potato, russet potato, onion, garlic, an egg, and some flour – oh yeah, and salt and pepper, too.  I sprayed some olive oil in my cast iron skillet and made ‘em nice and crispy. 

I’ve got some pictures, so as soon as I feel like plugging my camera into my computer, I’ll put them up here!  I have some great pictures from our fun school day yesterday.  Smile
