The new menu is up, but I have a problem. I need something for Monday. I need something new, something yummy, and preferably, something without dairy. Since I'm also doing my best to stretch a dollar, it needs to be inexpensive, too. Help a girl out, would you? Give me a good recipe, a link to a recipe, your grandma's recipe for whatever.........just help me! I'll add you to my menu; hopefully on a permanent rotation.

I'm late mama!!!!! Here's one that Chris loves and is fast, fast! It's my chicken parmesean. Just get a package of chicken breasts and cut them in half lengthwise. Dip them in flour, then egg, then flour again and brown on each side in a pan w/ a little oil. In a baking dish put a layer of red sauce (can be homemade or grab a couple of Prego). Then put three breasts down, then layer with crumbled feta, then layer more sauce, then three more chicken breasts, feta again and top with remaining sauce. Bake @ 375 for about an hour. Serve with your cooked brown rice and you are good to go! I am guessing you can do this with eggplant and/or zucchini too instead of chicken!
Got another one. Make some of your rockin pasta. Boil until al- dente and rinse w/ cold water, set aside. Meanwhile in a large pan saute garlic, shallot in olive oil. Then add a tablespoon tomato paste and one cup veg broth. You can also do this with about 2 cups chopped tomato or a can of chopped tomato. Simmer a tad. Then add back the pasta and toss. Take off heat and stir in 1/2 cup sliced basil! That's cheap too!
